Yeah if the PIC is a CFI you could log everything as dual received and you can get the extremely coveted CE-525 SIC rating (/s), but it’s not really any extremely special time. Now if they are Part 135 and require two crew per their OPSPEC/GOM, then yes you can log it. If they agreed PF was PIC, then PNF would log SIC. If PNF could not act as PIC due to a lack of an endorsement, then all he could log is SIC.
